Weir fishing
A tradition in harmony with nature
In collaboration with Pêcheries Charlevoix, this traditional fishing technique is practiced in the spring, in shallow waters, during the capelin’s spawning season, when the fish seek safe shores to lay their eggs.
Harvesting without disturbing the marine ecosystem
The weir, a structure made of nets set up near the coast, creates a gentle tunnel effect that captures fish approaching the shore, just as they're ready to spawn.
This method is remarkably gentle and environmentally responsible. Because it’s an artisanal trap, fish are caught in limited quantities rather than through mass harvesting, preserving the natural balance of the marine ecosystem.
A product born from Vietnamese know-how and Quebec’s resources
Sustainably caught by local fishers, the capelin is then transformed into a tasty sauce that enhances countless dishes: Asian classics, salads, soups, and cocktails.. all inspired by your own creativity.
