Nuoc-Cham Style dipping sauce

A simple and versatile sauce that is ready in just minutes, fresh, well-balanced, and perfect alongside spring rolls, crisp vegetables, or bowls. Inspired by classic Vietnamese flavours, this sauce highlights UMAM fish sauce, which adds depth and authenticity in just a few spoonfuls.
Preparation time: 5 minutes
Ingredients:
- 5 tbsp water
- 2 tbsp sugar
- 2 tbsp UMAM fish sauce
- 1 ½ tbsp lemon or lime juice (preferably fresh)
- 1 garlic clove, minced (optional)
- Fresh chili, finely minced, to taste (optional)
Instructions:
- Dissolve the sugar in the water. To help it dissolve more easily, you may heat about one-third of the water before stirring in the sugar, then add the remaining water.
- Add the lemon or lime juice and mix well.
- Stir in the UMAM fish sauce.
- Add the garlic and/or chili, if desired. Mix and adjust to taste.
Note: Prepare the sauce a few hours in advance and refrigerate. The flavours will be even better balanced.
