Vegetables

  • 2 bunches asparagus (about 600 g)
  • 1 carrot
  • 1 bell pepper

Marinade

  • 1 litre water
  • ½ cup white vinegar
  • ¼ cup white sugar
  • 1 ½ tbsp salt
  • A few ice cubes

Vinaigrette

  • 2 tbsp sugar
  • 2 tbsp UMAM fish sauce

  3. Prepare the vinaigrette: In a small bowl, whisk together all the vinaigrette ingredients.
  4. Assemble the salad: Pour the vinaigrette over the drained vegetables, add the chopped cilantro, and toss well to combine.
  5. Add the finishing touch: Sprinkle with chopped peanuts for extra crunch and flavour.
  6. Enjoy immediately to appreciate the crispness and freshness of the vegetables.
