Marinated asparagus salad with a touch of umami

Light, refreshing, and full of flavour, this marinated asparagus salad brings a satisfying crunch and a bright, tangy note. Enhanced by a vinaigrette with UMAM fish sauce, it’s perfect as a side dish or a starter. Easy to prepare and beautifully balanced.

Marinating time: 1 hour
Ingredients:
Vegetables
- 2 bunches asparagus (about 600 g)
- 1 carrot
- 1 bell pepper
Marinade
- 1 litre water
- ½ cup white vinegar
- ¼ cup white sugar
- 1 ½ tbsp salt
- A few ice cubes
Vinaigrette
- 2 tbsp sugar
- 2 tbsp UMAM fish sauce
- 3 tbsp water
- 1 tbsp lemon or lime juice
Topping (optional but recommended)
- 3 tbsp chopped cilantro
- 2 tbsp chopped peanuts
Instructions:
- Prepare the vegetables: Trim the tough ends of the asparagus. Using a peeler or a knife, slice the asparagus, carrot, and bell pepper into thin strips.
- Marinate: Submerge the vegetables strips in the marinade along with a few ice cubes. Let stand for 1 hour, then drain well.
- Prepare the vinaigrette: In a small bowl, whisk together all the vinaigrette ingredients.
- Assemble the salad: Pour the vinaigrette over the drained vegetables, add the chopped cilantro, and toss well to combine.
- Add the finishing touch: Sprinkle with chopped peanuts for extra crunch and flavour.
- Enjoy immediately to appreciate the crispness and freshness of the vegetables.
