Roasted halibut with soy sauce

Tender, flavourful, and cooked just right. This oven-roasted halibut is coated in a creamy soy sauce, enhanced with a touch of umami from UMAM fish sauce, and pairs beautifully with the crispness of snow peas. An absolute must-try!

Preparation time: 20 minutes

Cooking time: about 12 minutes



Ingredients:

  • 2 onions, thinly sliced
  • 15 ml (1 tbsp) sesame oil
  • 30 ml (2 tbsp) soy sauce
  • 15 ml (1 tbsp) UMAM fish sauce
  • 125 ml (½ cup) 35% cream
  • ½ small celeriac, julienned
  • 4 halibut portions, 150 g (5 oz) each
  • 120 g (½ cup) snow peas
  • Pepper


Instructions:

  1. In a pan, sauté the onions in the oil until very lightly browned. Add the soy sauce, an equal amount of water, and the UMAM fish sauce. Bring to a boil and cook for 2 minutes. Add the cream and the julienned celeriac.
  2. Place the halibut portions in the pan on top of the sauce, season with pepper, and bake at 375°F (190°C) for about 8 minutes, depending on the thickness of the fish. Remove from the oven. Set the halibut aside and keep warm.
  3. Reduce the sauce by half and adjust the seasoning.
  4. In a pot of salted boiling water, cook the snow peas until crisp-tender.
  5. Arrange the snow peas attractively on each plate, place the halibut on top, and spoon the sauce over.
