Roasted halibut with soy sauce

Tender, flavourful, and cooked just right. This oven-roasted halibut is coated in a creamy soy sauce, enhanced with a touch of umami from UMAM fish sauce, and pairs beautifully with the crispness of snow peas. An absolute must-try!

Preparation time: 20 minutes
Cooking time: about 12 minutes
Ingredients:
- 2 onions, thinly sliced
- 15 ml (1 tbsp) sesame oil
- 30 ml (2 tbsp) soy sauce
- 15 ml (1 tbsp) UMAM fish sauce
- 125 ml (½ cup) 35% cream
- ½ small celeriac, julienned
- 4 halibut portions, 150 g (5 oz) each
- 120 g (½ cup) snow peas
- Pepper
Instructions:
- In a pan, sauté the onions in the oil until very lightly browned. Add the soy sauce, an equal amount of water, and the UMAM fish sauce. Bring to a boil and cook for 2 minutes. Add the cream and the julienned celeriac.
- Place the halibut portions in the pan on top of the sauce, season with pepper, and bake at 375°F (190°C) for about 8 minutes, depending on the thickness of the fish. Remove from the oven. Set the halibut aside and keep warm.
- Reduce the sauce by half and adjust the seasoning.
- In a pot of salted boiling water, cook the snow peas until crisp-tender.
- Arrange the snow peas attractively on each plate, place the halibut on top, and spoon the sauce over.
